BAKE cheese tart specialty shop’s second store is located in the ekie Hiroshima complex, just north of Hiroshima Station. The first store is in ASSE, which is slated to be completely rebuilt in 2020, on the south side of Hiroshima Station.

自
2
017
ASSE
ekie
Many customers have come to the ASSE location since it opened in 2017. Using the same materials in the ekie stores continues the design narrative that customers have come to know so well. Copper’s antimicrobial properties maintain sanitary conditions while adding to the feeling of warmth from the fresh-baked cheese tarts. Mortar provides a contrasting backdrop, bringing out the appeal of both the copper and the tarts.

BAKE Inc.’s (owner of BAKE) philosophy is a shop that merges seamlessly with the kitchen. The glass facade allows customers to experience the making and baking process while purchasing tarts in the store. It also makes maximum use of the store’s location, with 2 sides of the space facing hallways.

▼平面图,空间动线围绕中央支柱展开,plan, the entire operation arranged around a centre support pillar
A support pillar, a notorious difficult architectural feature, becomes the central point about which the entire operation, from mixing to sale, revolves. The glass facade envelops that process, wrapping around the same central point. Areas outside the facade are open so customers can walk around that central point along the same movement lines as employees creating and selling tarts. Customers observe the creation process as they line up. They then make a purchase and can also enjoy their freshly-baked tarts in the seating area.
BAKE’s ekie Hiroshima store is an experience — from seeing firsthand how the tarts are made to indulging in the final product.
