Uncle, St Kilda是一家位于墨尔本海湾的休闲越南餐厅,采用本地采购的原料制作提供传统的越南饮食,此外还有一个极具情调的小酒吧。

餐厅的设计尊重了东南亚和越南风情。越南菜系有五大味觉要素:酸甜苦辣咸。在设计上,运用古代中国的金木水火土元素与理念实现平衡与和谐。餐厅被分成两个区域,楼上明亮质朴的用餐区和楼下黑暗低调的酒吧区。在用餐区中,木材原色,白色,灰色为基础色,明亮的黄色绿色为搭配色,餐具和配件那鲜艳而缤纷的色彩作为点缀色。整个餐厅有着让人欢愉的气氛。

Uncle is a casual, value driven Vietnamese Restaurant, Bar & Rooftop in the bay side precinct of St Kilda, Melbourne. With a team of hospitality A-listers at the helm, Uncle delivers a fresh – yet traditionally mastered take on Vietnamese street food.

Uncle is a term used throughout Vietnam to show endearment and respect, and similarly, the concept was designed to pay homage to the cultural nuances of Vietnam and Southeast Asia.

Balance and harmony was a key factor in the design process, and this can be seen in their cuisine where the integral formula of sweetness, sourness, saltiness and spice helps enact the sensorial ritual of mealtime. This formulaic balance of the senses ( sight, sound, taste, touch and smell ) can be seen in the ancient Chinese Philosophy of Wu-Xing, where similar elements of wood, fire, earth, metal and water combine to create a harmonious whole.

These elements were extracted and applied to the interior environment, working towards a space that would function well, but also appease the senses of a dining customer.

The narrative was further illustrated through a divide in the upstairs and downstairs zones : the downstairs bar channelling the buzz and atmosphere of a Vietnamese city-scape at night, and the upstairs restaurant  employing the simplicity and freshness of the Vietnamese countryside.

This distinct difference from bar to restaurant acts as a complementary process, but can still facilitate the needs of a group seeking social drinks and snacks, or a more relaxed dining experience.

The personality and sociability of Dai Duong, Rene Spence, naturally meant the inclusion of local artists and designers to help bring the space to life.  The decorative & colourful ceramics were produced by Fork Cermaics. The colours of the ceramics are linked throughout the interiors.

Vietnamese rice bags are used as menu holders, and planters for the luscious greenery throughout the venue.

The stairs are lined with colourful string that links the dark, steamy bar to the colourful, playful dining room, bar and rooftop terrace.

Uncle is a casual, value driven Vietnamese Restaurant, Bar & Rooftop open at188 Carlisle Street, St Kilda.

In the lead up to the Uncle’s opening, film guru KEITH DEVERELL had filmed a series of poetically paced observations detailing the making and assemblage of some traditional Vietnamese dishes. These 25 minute film installations rotated weekly, and ran each night from the Carlilse Street site from sundown.

Behind Uncle is an all-star hospitality team : RENE SPENCE (of The Smith, B’stilla & Pelican) will be manning FOH, Head Chef DAI DUONG (of Dandelion & Pelican) will be curating the menu and BOWEN HOLDEN (of famed Patricia & Brother Baba Budan) will contribute to the coffee offering.

The restaurant is divided over two main spaces: A downstairs bar seating 30 patrons and an upstairs casual dining space for 120 with an opening to the vegetated rooftop.

Product takes pride of place at Uncle, with an emphasis on locally sourced goods. Locally farmed goat and pork will be on the menu, with produce served on handmade crockery by Fork Ceramics and wait staff dressed in denim aprons by Wootten. Good quality and well priced local wine, beer and spirits will be on tap.

FOOLSCAP STUDIO were part of the A-Team, working with the boys on concept, interior architecture and styling of the space. Foolscap have a resume with some of Melbourne’s most popular eating and drinking spaces (Shebeen, The Richmond Weekender & Patricia) a nomination at this years Eat Drink Design Awards for ‘Best Café design’ and the 2013 IDEA Award for Emerging Designer.

Inspiration from the interior has been taken from Wu Xing Philosophy. The balance of five taste elements of sour, bitter, sweet, spicy & salty that govern Vietnamese cuisine. Foolscap balance five elements wood, fire, earth, metal and water amongst the interior and rooftop spaces.

The downstairs bar will be a dark and atmospheric setting to enjoy a drink, whilst the light, bright upstairs dining area will be buzzing with activity and colour. Festoon-lighting will invite beers on the rooftop over the coming summer months.

Uncle stands for a Vietnamese adventure, serving tasty morsels and unwavering hospitality to Melbourne diners.
