New York design studio Polonsky & Friends has designed this tiny New York omakase restaurant-Bar Miller. It prioritizes locally sourced, sustainable fish and seasonal ingredients, embodying a fusion of traditional sushi craftsmanship with a contemporary dining experience. Designed by the same team behind the acclaimed Rosella, known for its innovative a la carte sushi concept, Bar Miller exudes warmth and sophistication while maintaining its own unique identity.

The design process faced several challenges, including the spatial constraints of the small 8-seat restaurant and the need to balance Japanese-inspired elements with a non-traditional menu and the team's non-Japanese background. Despite these constraints, the design seamlessly integrates local and craft-centric features while subtly nodding to Japanese aesthetics and oceanic motifs, creating a luxurious yet inviting ambiance.

Materials like Avocatus stone, Rosso Lepanto marble, and custom wood veneer panels add texture and depth to the space, while handcrafted ceramics and bespoke furniture pieces contribute to the restaurant's bespoke atmosphere. The result is a harmonious blend of elegance and authenticity that complements Bar Miller's culinary philosophy.
